When it comes to Christmas music I love to listen to traditional Christmas carols. Some have deep and beautiful lyrics that stir your soul and remind you the real meaning of what we are celebrating this time of year. Among my favorites are <i>Lo how a rose e'er blooming</i> and <i>O Holy Night</i>. Tonight as I was looking for something to listen to while baking I stumbled across a music channel (Sirius XM Classical Pops) that was playing some of these beautiful carols along with some I heard for the very first time like this traditional French carol from the 1700's:<br />

Keep moving around the perimeter of the cloth keeping in mind people will be reading this while seated at your table. After you are all done filling in the cloth with all the words on your list spray it with scotch guard to help with cleaning in case of any spills.</div>

I woke up early the other morning to the beep beep of my phone receiving a text message. Sleepily I rubbed my eyes, rolled over and looked at the screen. Colorful roses are blooming along with the pretty "dancing ladies" tree. It is still warm with temperatures hovering around 80. The persimmon tree is full of delicious fruit and the pomegranates are bright red. My landlady and I will be squeezing them soon and making our yearly batches of pomegranate jelly. Pumpkins have appeared (thanks to Charlotte and Bill) and some very strange looking gourds. Fall is here!<br />

With October well on it's way I get in the mood to make more dishes in the oven. One of the recipes that I tried last week was a new take on enchiladas. The original recipe was called <a href="http://www.insockmonkeyslippers.com/roasted-butternut-squash-and-garlic-enchiladas">Roasted Butternut Squash and Garlic Enchiladas</a> and was posted on the food blog <a href="http://www.insockmonkeyslippers.com/">In Sock Monkey Slippers</a>. I've tried several of her recipes in the past and they've turned out great. A friend of mine had grown some butternut squash in his garden and gave me a couple. They had been sitting on my counter staring at me so here was the perfect recipe to use them up! I changed it up a little bit to adapted it to my own taste. I added roasted chicken which can be optional if you want a vegetarian dish.</div>

Preheat our oven to 400 F. Prepare your baking sheet by lining it with parchment paper. Get a whole head of garlic and cut off the top (about 1/4 to 1/2 an inch) then place on a piece of parchment paper and drizzle with olive oil and course sea salt. Gather and twist the paper together like a little package. You can also use foil but I didn't have any. Cut the squash lengthwise, scoop out the seeds and place facing down on the lined baking sheet. I did learn a great tip from Meredith: <em style="background-color: white; color: #171717; font-family: Georgia, serif; font-size: 14px; line-height: 19.59375px;">Placing the whole squash in the microwave for 45 seconds before cutting will make slicing easier." </em><span style="background-color: white; color: #171717; font-family: Georgia, serif; font-size: 14px; line-height: 19.59375px;"> </span><span style="background-color: #fff2cc; font-family: Georgia, serif; font-size: 14px; line-height: 19.59375px;"> </span><span style="background-color: #fff2cc; font-size: 14px; line-height: 19.59375px;"><span style="font-family: inherit;">So true! After taking it out of the oven let it rest and cool off for just a bit so you don't burn your fingers. Gently scoop out the squash away from the skin and put into your food processor. (A blender will also work) </div>

Squeeze the garlic cloves from the head into the food processor with the squash. They will just sort of pop out of the casing. Process or blend and test for salt. Add is needed. I also added black pepper, a bit of cayenne pepper and some ground cumin for extra flavor.<br />

Somehow the summer has managed to have come and gone! So in honor of tomorrow being the first official day of Fall I made some Pumpkin Pancakes with Pancetta sprinkles on them. I was browsing around for a recipe and found one <a href="http://www.peanutbutterandpeppers.com/2012/08/28/pumpkin-pancakes/">here</a>. It sounded good but I adapted it to what I had on hand and made it my own way. It's a great recipe for two and very easy to make. Here is what I did...<br />

1/3 cup almond milk (unsweetened)<br />

Fry up the pancetta in a cast iron skillet until crispy. In a small bowl mix the milk, pumpkin, egg, vanilla. I a separate bowl combine all the dry ingredients. Combine the dry ingredients into the wet ones until all mixed together. Heat up the skillet with the pancetta drippings over a medium heat. Add a scoop of batter (about 1/4 cup)and cook until bubbles appear on top. Flip over and cook until done. Serve with maple syrup and sprinkle pancetta on top. Enjoy!<br />

Start by rinsing and draining 3 cans of beans. I used Pinto beans, Southern Style Blackeye Peas, and Black Beans. Place in a large bowl. I have a confession to make. Even though I love cooking and baking I've always been a little intimidated by bread making. So of course I kept putting it off... It kept staring at me on the kitchen counter and I kept trying to find time and a recipe I felt comfortable trying. So this Saturday morning feeling rested after a good night's sleep I decided I would take on the jar of strange smelling goo. This is a "semi-home made" easy recipe which you can throw together quickly and you can tweak it a little depending on what kind of pie filling you happen to have in your pantry. <br />

<span style="text-align: start;">All you need is a box of the mix and a 6 oz container of plain yogurt ( I used fat free Greek yogurt). </span><span style="text-align: start;">Mix them together. If it seems really dry at first just hang in there... it takes a bit of stirring to come together into a nice batter. </span></div>

Pour into a pan and bake at 350 for 30 minutes. This time I tried something just a little different and put scoops of batter in an individual size brownie pan.<br />

My mom sent me this recipe a few years ago and I have made a few adjustments to my liking. It's called<br />
<b><br /></b>
<b>Spicy Vegetable Lentil Soup.</b> Makes about 10 servings<br />
<br />
1 Tablespoon Olive Oil<br />
1 medium Onion, chopped<br />
3 stalks Celery, chopped<br />
3 Carrots, chopped<br />
1 red Bell Pepper, chopped<br />
5 Garlic cloves, sliced<br />
1 quart Chicken Broth (low sodium)<br />
4 cups Water<br />
1 cup dry Lentils<br />
1 can crushed Tomatoes (28 oz)<br />
2 Bay Leaves<br />
2 Tablespoons Balsamic Vinegar<br />
Salt and Pepper to taste<br />
<br />
Heat oil in a large sauce pan over medium high heat. Add onion and cook for about 5 minutes stirring occasionally. Stir in celery, carrots, garlic and bell pepper and cook for another 3 minutes. Add in all remaining ingredients except the salt and pepper. Bring to a boil over high heat. Reduce heat and simmer uncovered for 20-30 minutes or until lentils and vegetables are tender. Season to taste with salt and pepper if desired. Remove bay leaves before serving. Enjoy!<br />

Thanksgiving is just two weeks away (can you believe it!) but there is still time to make this great personalized Thanksgiving tablecloth. It is inexpensive and requires no sewing! And if you are brave enough you could even get the whole family to help you put it together.<br />

<li>One fabric drop cloth (I bought mine from Lowe's) It already comes hemmed!</li>
<li>Several permanent ink markers (different sizes) I used large and medium Sharpies </li>
<li>A can of scotch guard</li>
<li>A "thankful" list</li>

Ask your family members to put together a list of things they are thankful for (as long or short as you'd like). Iron the drop cloth to get all the wrinkles out. Lay the drop cloth on the floor. Armed with your "thankful" list and sharpies start writing on the cloth. Begin writing on the cloth using different sizes of letters, fonts, and styles. Trust me this is the fun part! Keep moving around the perimeter of the cloth keeping in mind people will be reading this while seated at your table. After you are all done filling in the cloth with all the words on your list spray it with scotch guard to help with cleaning in case of any spills.</div>

Today I made a dish that I had never tried making before. With the weather changing and cloudy cooler days I was in the mood for some comfort food. It looked delicious and so right after church I headed for the grocery store with ingredient list in hand. I did a few adaptations of my own. I roasted my own chicken legs and thighs instead of buying a whole rotisserie chicken from the store. Also, I didn't have cognac on hand so I substituted some white wine instead. Oh, and not really being a fan of bought pastry crusts I made my own. Of course if you want to make this faster by all means go ahead and use it. Make one and share one with a friend!<br />
<br />
<span style="font-size: large;"><i>Chicken Pot Pie</i></span><br />
<b>Ingredients:</b><br />
3 Tbs Butter<br />
1/2 Onion, chopped<br />
2 large Russet Potatoes, cut into 1" cubes<br />
3 Carrots, cut into inch pieces<br />
1 container of baby Belle Mushrooms, sliced<br />
1/2 cup white Wine<br />
3 Tbs Flour<br />
1 1/2 -2 cups Chicken Broth<br />
3/4 cup Milk (I used fat free)<br />
2 1/2 -3 cups Chicken, cooked and cut into small pieces (I used 3 drumsticks and 3 thighs)<br />
1 cup Peas, frozen or fresh<br />
1 tsp Thyme, dried<br />
1/2 tsp Rosemary, dried<br />
A few springs of fresh Thyme<br />
1/2 tsp Poultry seasoning<br />
Salt & Pepper to taste<br />
1 <a href="http://thepioneerwoman.com/cooking/2007/12/p-p-p-pie_crust_and_its_p-p-p-perfect/">Pie Crust</a>, unbaked<br />
1 Egg yolk + 1 tsp Water for the egg wash<br />
<br />
Add first five ingredients to a heavy pot (dutch oven). Cook for 10 or until the veggies are a bit soft. Add the wine and then the flour and cook for a minute or two. Then add the chicken stock and milk and cook until thickened. Add the chicken, peas, and seasonings adjusting as needed.Transfer the mixture to the baking dish of your choice. <br />

This past Friday I spent the evening baking some pies for a fund raiser. (<a href="http://www.noahsheart.org/">Read about Noah's Heart here</a>)<br />

I decided to make two pumpkin and one apple. Since I was baking these to raise money I opted to buy an inexpensive but cute pie plate instead of the disposable foil ones. I found this really cute one at the local Marshall's store. It said <i><b>"Stay Calm and Make a Pie"</b></i> along the rim. <br />

My favorite recipe for pumpkin pie comes right off of the Libby's can but I have adapted it and changed it up a little to suit my taste. <a href="http://adayinthelifeofruth.blogspot.com/2011/11/auntie-ruths-pumpkin-pie.html">I posted it last November</a>. This time I used cinnamon, allspice, ginger and pumpkin spice. If you want to you could just pour the recipe into a glass baking dish minus the crust.<br />

This year I also used an old recipe I have had written down on a little piece of paper. I believe it came from one of my Mom's cookbooks. It is a really fool proof pie crust recipe.<br />

The secret to a good crust is to use ice cold water and don't over mix or handle the crust too much. Just combine until the ingredients are mixed together. I like to mix up the pie crust ahead of time (the day before) and then refrigerate it in round discs ready to be used. The recipe makes two pie crusts.</div>
